Bacon & Moringa Frittata

1 lb center cut antibiotic/nitrate free bacon

1 bunch of moringa leaves (stems removed)

4 eggs

2 Tbsp heavy cream

salt (optional)

~ prepare bacon, remove from the pan, reserve grease - don't clean the pan. Use the same pan you cooked the bacon in to cook the moringa until it wilts. Remove the moringa from the pan and prepare the eggs by breaking each egg into a bowl, adding cream and whisking until incorporated. Break the bacon into pieces or use kitchen scissors to cut each piece - leave on the side with the moringa. Pour eggs into the pan over medium (add a little avocado oil or more bacon grease to the pan if it needs - unless you're using a non stick pan). Keep the eggs in a single layer, add the moringa and the bacon by spreading all around. Lift the sides of the eggs to get some of the mixture to spread underneath. Carefully flip the frittata using a wide spatula or by turning onto a plan and back onto the pan. It's okay if it splits apart a little. Sprinkle with salt if you prefer. Enjoy!
