Berry Cake - gf, grain free & sugar free

The pancakes failed but the cake didn't...when in doubt - put it in the oven!


Preheat oven to 375 degrees


  • 1 cup coconut flour

  • 1 cup almond flour

  • 1/3 cup erithrytol

  • 1 Tbsp baking powder

~ mix to combine all dry ingredients


  • 2 eggs

  • 2 cups almond milk

~ whisk to combine all wet ingredients


2 cups mixed (frozen) berries


Add both dry and wet ingredients to make a thick batter. If it appears too thick add a little water to thin. It should resemble muffin batter. Add mixed berries and stir gently to combine. Place in a greased loaf pan and bake for 40 minutes. Check center and bake longer if necessary. Enjoy straight from the pan.
