Bison, Arugula & Eggs

a drizzle of Avocado Oil

1/2 lb ground bison

2 large handfuls of fresh arugula

2 eggs

salt and pepper

~ heat the oil, brown the bison, add the arugula, crack the eggs, turn heat to medium low cover with a lid, set for 2 minutes. Remove from heat, season & serve.
