Brunch - Make this!

  • Pork sausage, eggy frittata, arugula, mozzerella, basil & sun-dried tomato

  • Base Culture low carb/gluten free paleo bread

  • Avocado

  • & Strawberries


preheat oven to 400 degrees, once heated place the number of slices of bread you'd like to eat on the wire rack

drizzle avocado oil in a pan heated to medium high

pinch off the amount of sausage meat you want to use

brown the sausage

add a couple handfuls of baby arugula

meanwhile break 4-5 eggs in a bowl and whisk, add a Tbsp or so of water for fluffier eggs otherwise omit

pour eggs over meat/arugla

*check on toast

turn heat down to medium and cover the pan for 1-2 minutes

remove cover and add 4-5 baby balls of mozzarella, a couple leaves of basil and 1-2 sundried tomato, chopped

lift the sides of the egg with a spatula carefully to get some of the egg mix to pour into the bottom of the pan and replace the lid for another minute

remove lid and serve alongside avocado & strawberries

*remove toast if you haven't already.
