*Raw Cashew Beet Pie - with Pecan Crust

3 cups Cashews soaked overnight

1/2 cup coconut milk

1/4 cup erythritol or monk fruit sweetener*

2 Tbsp Beet Powder

juice from 1 lemon - zest your lemon before juicing it and reserve for topping

~ Blend

2 cups pecans

2 Tbsp coconut oil

~ Processed until fine and smooth, almost like nut butter

Use a spring form pan, press pecan crust down. Add cashew beet filling and spread evenly. Freeze. Remove and allow to thaw 20 minutes before eating. Store in freezer.
