Chocolate Covered Covid19



Chocolate Chia Banana Oat Muffins (with power greens!)


1 medium banana (extra ripe)

1 cup quick cooking oats

1.5 Tbsp chia seed

1 large handful of power greens (mix of chard, kale & spinach)

1 Tbsp monk fruit

1 Tbsp cacao powder

1 tsp salt

1 tsp cinnamon


Greased standard size muffin tin - bakes up approximately 6 muffins

350 degree oven

20 minutes

Allow to cool fully so chia seeds can set and banana can absorb the oats

Insides will be gooey and soft

Eat as is or smear your favorite nut butter or frosting on top
