Curried Cauliflower Rice with bacon with scallion & cilantro


16 oz of cauliflower rice

10 oz frozen spinach or 3 large handfuls of fresh

1 Tbsp ghee

1 tsp turmeric

1 tsp cinnamon

sea salt

pepper

cayenne

2 strips of cooked bacon

2 Tbsp of nutritional yeast

chopped cilantro & scallion - roughly 1 Tbsp each

nutritional yeast


~ cook the cauliflower rice until much of the water has been cooked off. Add spinach. Once it wilts or cooks down add ghee, spices and bacon. Cook for an additional minute until hot and everything is incorporated. Place in a bowl and sprinkle with nutritional yeast, top with scallions and cilantro.
