Edamame Chopped Salad


Here's a super simple salad with an even simpler salad dressing - delicious - refreshing - crunchy...prepare to munch like a bunny for a while because you'll need time to savor this one.


1/2 small purple cabbage - chopped

1/2 medium cucumber - sliced in 1/2 then cut

1/4 orange bell pepper - chopped or sliced

1/2 bunch curly parsley - chopped


1/3 - 3/4 cup edamame - I buy it shelled and frozen then cook for 5 minutes in a pot with water to cover about half way up. Drain the water then add to the salad.


Dressing:

1/2 cup olive oil

3 Tbsp balsamic vinegar

1 Tbsp tamari

1 clove garlic

1 tsp dijon mustard

salt and pepper to taste

~ blend


add dressing to chopped salad, toss, mix, munch xo kT
