Using the saute setting on the Instant Pot, add avocado oil
Once chicken is rinsed and dried, cover with salt, pepper & paprika
Sear the chicken on both sides until slightly browned (this takes about 10 minutes)
Add 1/2 cup water - this is because the instant pot has a burn sensor and without the added water it will detect burning if there isn't enough moisture. Nothing a little water won't fix.
Add 3 large sprigs of rosemary
Pressure cook on high for 40 minutes
