Katie’s Almond/Pear Cake gf, grain free, sugar free

This cake is free from refined sugar, grains, & gluten. It’s a wonderul holiday cake but is more than suitable for any occasion!

Preheat oven to 370 degrees. Grease a medium size square or round baking dish. Mine was approximately 9.5 inches.

In one bowl add:

2 cups almond flour

3/4 cup coconut flour

1/2 cup erythritol

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/2 tsp ground ginger

pinch of salt

~ mix ~

In a separate bowl whisk together:

3 eggs

+ 2 yolks

1 1/2 cups almond milk

For garnish:

1 ripe Bosc or d’anjou pear

1 tbsp coconut oil

add the wet ingredients to the dry and mix the batter. Pour into prepared dish and top with sliced pears. Drizzle or brush the coconut oil over the pears. Bake for 40-50 minutes until the top is golden brown and the middle is set. Allow to cool.

The sorbet was was made with:

1.5 cups of frozen mixed berries

1/4 cup Naked pea protein

2 tbsp pb2 fit peanut powder

1/2 tsp stevia

roughly 1 cup of almond milk

use a high speed blender or the tamper to make a thick creamy sorbet-like consistency
