Katie's Big Ass Salad

Eat 1x a day. Functional Medicine orders.

2 bunches of your favorite greens - a combination of mesculin, spinach, chard, baby kale, romaine etc

1/2 small red onion

1/2 cucumber

1 can of sustainably caught albacore tuna

1 Tbsp avocado oil mayo (see below)

1 Tbsp Primal Ranch (found at Whole Foods, your conscious grocer or online)

a handful of these soaked and roasted walnut/almond mix with turmeric and cinnamon

salt and pepper to taste

Mix the salad together - I will admit to using my hands on this one, seriously our bed kitchen tool - omitting the nuts until the end. Break apart the tuna chunks. Make sure the dressings are touching every precious leaf of lettuce. Enjoy in a comfortable lounging position.
