Kid Friendly Chocolate (spinach) Mini Muffins - Vegan/Gluten Free/Sugar free

Sshhhh, there's a secret ingredient in these I'm pretty sure you'll be stoked your kids are eating too. It's spinach and I've included these on my latest vlog about single parenting - it's been a fun venture - replete with goodies and realities of day to day life. Ingredients & method

Preheat oven to 350

Into a blender add:

1 cup unsweetened of almond milk

1 cup quick cooking oats

1 cup loose spinach (or 1 handful)  1 medium sized ripe banana 1.5 Tbsp cacao powder 1.5 Tbsp chia seed

1 Tbsp monk fruit (sugar free natural sweetener) *use more if you think you need these to be sweeter tho my kids gobbled them up as is 1 tsp baking powder 1 tsp cinnamon 1/2 tsp sea salt 1/4 bar of Lily’s sugar free semi sweet baking chocolate - broken into chunks

~ blend 1/4 bar of chocolate bar, chopped, sprinkled on top bake for 15 minutes in a greased mini-muffin tin (I use coconut oil cooking spray)
