Matcha Chia Pudding


Matcha • Chia • Pudding


1 extra firm block of tofu

1 cup almond milk

1/3 cup chia seeds

1/3 cup monk fruit sweetner

1 Tbsp matcha powder


~ blend everything and divide into 3 small-medium sized bowls


~ top with shredded coconut & blueberries. To make this simple blueberry compote:


1 cup frozen blueberries

1/2 cup water

2 Tbsp monk fruit sweetner


cook on the stove, bring to a gentle boil, reduce to a simmer. Smash the blueberries with the back of a fork and cook on low until it thickens. Allow to cool and spoon on top of matcha pudding.
