Soaked & Roasted Nuts - Increase digestibility

Soaking your nuts helps to remove phytic acid - which is an antinutrient and found in many nuts, seeds, legumes and grains. Thankfully a little warm water and salt does the trick.

For a BIG batch:

4 cups raw almonds

4 cups of raw walnuts

place in a bowl

add 1 Tbsp salt

cover with warm water

Soak for 8 hours or over night

Set oven to 350

Drain nuts

place on 2 baking sheets in a single layer

sprinkle with sea salt, turmeric, cinnamon and a little erythritol (optional, this adds a touch of sweetness but it's not necessary)

Roast for 35 minutes

Turn the nuts carefully using a spatula

Roast another 10-15 minutes

Remove, allow to cool, place in jars and keep in the fridge. Top on salads or eat as a simple snack
