No Churn Ice Cream

2.5 cups heavy whipping cream

4 Tbsp erythritol

I use my Vitamix, starting on the low setting and working my way up to medium. Alternatively you can use a hand mixer. If using a blender, just keep an eye on the mixture. You'll notice when it's been whipped just enough. Pour into a container and place in your freezer. Stir every hour until solid...or if after the first hour you feel like sitting there and indulging with yourself, or your kids, or your friend, or your partner, do that. Take in the sugar free creamy spoonful of heaven you just manufactured out of practically nothing. Then reap the amazing feeling that you have knowing that this is truly a sugar free creamy dessert that is delicious plain but incredibly versatile. Damn you're amazing.
