Packed Lunch - Miso Salmon Salad

1 lb poached salmon

1 tbsp mayo

1 tbsp miso paste

1 tsp mustard

dash of rice vinegar or apple cider vinegar (or fresh lemon juice)

2 handfuls of arugula

salt and pepper

~ mix everything in a bowl

- chopped carrots

- nuts

- thin apple slices (1/2 apple)
