Puréed Dahl - farmers market produce haul

The instapot - a pot of possibilities - convenience, functionality & practicality


1 onion

1 thumb size nub of ginger

1 long chili

1 tbsp turmeric powder

3 cloves garlic

1 medium zucchini

1 large bunch of choy sum

1 carrot peeled and chopped

1 large daikon peeled and chopped

2 cups rinsed yellow split mung beans

4 cups water

*this will completely fill the instapot! You can of course make this just the same on the stovetop - you’ll just need to monitor the cooking - boil & simmer process.

~ set to ’bean soup’ setting

Once finished - remove lid carefully and add salt, tamari & braggs seasoning blend. Purée with your handheld immersion blender such as Cuisinart or carefully ladle into your blender and purée on a relatively low setting if it’s still hot - enjoy with seared tofu (medium thick slices of tofu seared in coconut oil - allow the tofu to cook completely on one side before flipping - season with salt) • use the same pan to roast a handful of raw peanuts Xo kT
