Roasted Peanut, Mint & Zoodle Salad

I hope this satisfies that craving you may have for something light, crunchy and flavorful - because it did for me. This is a combination of local zucchini, mint and peanuts plus a few other easy to find ingredients. Enjoy!

Ingredients I used:

2 small/medium sized zucchini

roughly 1/2 cup raw peanuts (the ones I used were whole)

1 Tbsp coconut oil

sea salt

1 Hawaiian (or similar) chili

2 cloves of garlic

juice of 1/2 lime (or lemon)

1 Tbsp tamari (or soy sauce/braggs)

1-2 sprigs of mint yielding


S& P to taste


Method:

Using a mandolin or similar, run the zucchini along the long edge of the fruit and shred into long strips. Can be done by shredding too - the salad will taste the same (fabulous)


Meanwhile - heat the coconut oil on a pan set to medium heat and add the peanuts. Sprinkle with sea salt. Toss the pan around ensuring that the peanuts don't burn.


Chop garlic, chili & mint leaves

Add zucchini noodles and toss

Add the tamari, lime juice

Toss again


Adjust salt and add fresh ground pepper. Enjoy - in all the ways. xo
