Sausage and then some


I utilized the remnants of food in my fridge which included fresh/flash frozen veggies from my freezer. Quick tip* while I consume a lot of veggies I consume less plant foods now that I *also* consume meat. In which case I purchase veggies in bulk sometimes and freeze them so they don’t spoil. From spinach to arugula to green beans to mushrooms. Yes. Your freezer is your friend and will help retain your veggie’s nutrients. Enjoy:


1/2 lb pork sausage - browned

2 handfuls is frozen green beans - broke in half

1 lb or 2 handfuls of whole baby portobello mushrooms


Almonds for garnish


~ drizzle avocado oil in a pan and brown sausage until it’s 1/2 way cooked through, about 1.5 - 2 minutes. Add frozen veggies and stir. Allow to steam/sauté cook for roughly 7 minutes without stirring (perfect time for a “mom” shower). When u return to the pan stir again to combine and allow veggies to hit all sides with the heat. The juices from the pork will also saturate the veggies making them super delicious. Sprinkle with salt. Top with whole or chopped nuts. Enjoy!
