Make these - especially because you're busy and you have so little control over parts of your life so that when the shit truly hits the fan - you have breakfast. And not only that, it's savory, nutritious and fits your nutritional bill of health. They don't call me health_thrive for nothing ::wink wink:: These are packed with protein, good fats, antioxidants and simple nut based binders. Easy on the eyes and digestion.
2 large handfuls of kale
Blend (I use my Vitamix for everything, muffins are not exception), then add:
1 1/4 cup almond flour
1/2 cup coconut flour
1/2 cup almond milk
1 tbsp Italian seasoning
1 tsp baking powder
1 tsp baking soda
a large pinch of salt
Blend again, then pour into a 12 cup greased muffin tin and bake at 395 degrees for 35 min. Allow to cool then remove from tin. Drizzle with coconut butter and a little pinch of course sea salt and enjoy. Another savory way to serve these is to smear Kite Hill cream cheese - I love their chive and everything flavors.
