Noodles are one of those foods that are fun to stuff your face with - ya know? - it's that feel good satiety that doesn't just come from the food itself but every other aspect of eating them too. It's the handling of the noodles, the chewing, the mouthfeel, the mouthful....so good. These are no exception - except for the fact that they'r made from Edamame - as opposed to durum wheat flour. They're absolutely loaded with protein and if you can get past the texture - because no matter how you angle it they will always be edamame noodles and not traditional pasta noodles - then you're good! Expectations aside. Let's go.
1-2 handfuls of noodles cooked in boiled water - Step 1. Boil water, Step 2. Turn off burner, Step 3. Add noodles, Step 4. Cover with a lid, Step 5. Set timer for 4 minutes.
Meanwhile, slice red bell pepper thinly, set aside
~ add bell pepper to warm noodles so they soften a little while you make the dressing
Dress noodles with:
1 Tbsp sesame oil
2 cloves garlic chopped
1 red Hawaiian chili (or similar, cayenne works too)
1 Tbsp Tamari or Soy Sauce
Juice from 1/2 lemon
Salt & Pepper
Sprinkle of Nutritional Yeast
