Sesame Roasted Peanut & Tomato Salad with Basil & Mint


This salad is a very simple - super tasty and an excellent pot luck dish!


For the dressing:

2 cups of raw peanuts

5 whole cloves of garlic

2 Tbsp sesame oil

salt

ground pepper


1 small bunch of sweet basil

1 small bunch of mint


For the veggies:

approx 40 cherry tomatoes

1 bunch of Long Bean - regular green beans will work also


~ Combine the peanuts with sesame oil, garlic, salt and pepper. Roast in a 325 degree oven, shaking the pan every 10 minutes or so until toasted. Takes about 25-30 minutes.


Prepare long beans by chopping into 1-2 inch pieces, place on a tray, lightly drizzle with oil or use some Avocado Oil cooking spray to coat the beans evenly. Sprinkle with salt and place in the oven with the peanuts. Continue roasting until tender.


Meanwhile chop several cherry tomatoes - depending how many you are feeding. This was for 15 people, so I chopped approximately 40 tomatoes.


Combine roasted peanut & garlic with basil and mint in your Cuisinart (I use the 11 cup machine) and process until well incorporated - but not pasty or like peanut butter. I kept it "chunky." Tweak the salt to your liking.


In a large bowl combine peanut/herb mix with tomatoes, flipping the mixture gently. Top with roasted long beans once they're nicely done from the oven. Garnish with extra mint. Adjust salt and pepper. Enjoy!
