2 small heads of green cabbage
1 Tbsp sea salt - mixed with 1 cup of water
~ chop cabbage. Add to jar. Mix salt and water, pour over the cabbage. Top cabbage with additional filtered water until all the cabbage is submerged. Works best when the cabbage fits the entire jar otherwise you'll want to place an object - preferably glass, not metal or plastic - between the cabbage and the lid. Allow to sit on counter for 4-6 days. Then refrigerate.
